Whole 30 Kale Asparagus Frittata

8 eggs, scrambled with salt and pepper
1/2 tbsp ghee
1/2 shallot, minced
1 clove garlic, minced
10 stalks asparagus, chopped
1-2 cups of kale, chopped
pinch of red pepper flakes
Set oven to 350 degrees.
In a oven safe pan, melt ghee over medium heat.
Once melted, add in shallots and garlic and cook for 2-3 minutes.
Add in kale, season with salt and pepper and cook until wilted.
Remove from heat, and add eggs and asparagus.
Top with red pepper flakes.
Place in oven and cook for 25 minutes.
Remove and let cool completely, before slicing.
tips & tricks
Top with avocado for extra good fat.
Store in airtight containers and reheat in microwave or oven in the morning
Great option for meal prepping when you need a quick breakfast.
