White Bean Salad

Vegetarian Option | Gluten Free

Total Time 20 Minutes



2 cans of cannellini beans, drained

1 handful parsley, chopped

1 handful dill, chopped

1 lemon, juiced

1/2 red onion, sliced thin

1/4 cup extra virgin olive oil

salt and pepper to taste

1/2 bunch of asparagus, chopped

  • Preheat oven to 350

  • Roast asparagus for 5 minutes, when finished let cool for 10 minutes

  • Mix all ingredients in a big bowl

  • Store in airtight container for one week


tips & tricks

Vegetarian Option: Leave out chicken breast

For a simple side dish just mix white beans, parsley, red onions,

lemon juice, olive oil, salt and pepper
