roasted brussel sprouts, chopped
roasted sweet potatoes, chopped
roasted asparagus, chopped
roasted broccoli, chopped
baked chicken, sliced
Roast vegetables in the oven with extra virgin olive oil, salt, and pepper
Once vegetables are slightly browned, remove from oven and let cool
Mix all remaining ingredients in bowl with vegetables

Make a big batch of roasted vegetables in the refrigerator, throw in skillet to heat or eat cold.
Other delicious vegetables to add are carrots, acorn squash and butternut squash.
