roasted brussel sprouts, chopped

roasted sweet potatoes, chopped

roasted asparagus, chopped

roasted broccoli, chopped

baked chicken, sliced

cilantro, chopped

tahini dressing 

  • Roast vegetables in the oven with extra virgin olive oil, salt, and pepper

  • Once vegetables are slightly browned, remove from oven and let cool

  • Mix all remaining ingredients in bowl with vegetables

tips & tricks

Make a big batch of roasted vegetables in the refrigerator, throw in skillet to heat or eat cold.

Other delicious vegetables to add are carrots, acorn squash and butternut squash.
