Thick & Creamy Freezer Fudge

3/4 cup almond butter

1/4 cup softened coconut oil - you don't want it melted

1 tsp vanilla

pinch of salt

1 tbsp monkfruit maple syrup

1 tbsp cacao powder

add ins of choice: seeds, nuts, cacao nibs, coconut flakes etc.

Equipment:

parchment paper

rimed baking sheet or rubber molds

Mix all ingredients in a bowl except for cacao powder.

Once ingredients are mixed well, take half of the batter out and add to a second bowl.

Add the cacao to the second bowl.

Line a baking sheet with parchment paper and spread out the your first layer. At this time you can add any add ins (coconut flakes, nuts, cacao nibs etc).

Put in freezer for 10 minutes.

When the fudge is hard, add your second layer and top with flaky sea salt.

Put in fridge for another 10 minutes or hard.

Remove and cut into square. Must store in freezer (or they will melt).

For easier version just make one flavor either plain or chocolate.

tips & tricks

I buy the monk fruit maple syrup from Whole Foods. The brand is Lakanto.

Monkfuit is an all natural, zero calorie sweetener.

Make sure to top with flaky sea salt - it really brings it to another level.

Must store in freezer or chocolate will melt.
