1 package turkey meat
1 jar of clean salsa (no sugar added)
1 tbsp EVOO
1/2 tbsp cumin
1/2 yellow onion
4 cloves of garlic, minced
1 bell pepper, chopped
1 red onion, chopped
1 cucumber, chopped
1 can of black beans, rinsed and drained
romaine lettuce, chopped
2 avocado or guacamole
On the stove heat up the evoo and saute the onion and garlic until clear, add the turkey meat and cook until brown.
Add half of the jar of salsa and cumin, cook until heated through.
Chop of romaine lettuce and place in bowl.
Top with meximeat, bell pepper, red onion, 1/4 avocado or scoop of guacamole, black beans and cucumbers.
Dress with clean salsa and a squeeze of lime.
tips & tricks
Check salsa ingredient label for added sugars,
the only sugar should be from the tomatoes.
Serve over cauliflower rice to make a Mexican burrito bowl.
