Spicy Kale Egg Bake

1 tbsp butter or oil of choice
1 green bell pepper, chopped
1/2 yellow onion, chopped
1 jalapeno, chopped
1-2 handful chopped, kale
6 tbsp salsa
salt and pepper to taste
optional add ins: cooked crumbled bacon or diced ham
Heat oven to 300 degrees.
In a pan, add butter and saute bell pepper, jalapeno, and onion.
Once onions are soft, add in spinach.
Remove from fire and let cool for 5 minutes.
While cooling, whisk eggs in a bowl and season with salt and pepper.
Pour eggs on top of sauteed vegetables.
Top with optional cooked bacon or ham
Top eggs, with dollops of salsa.
Bakes in oven for 20 minute, until eggs are set but not fully cooked.
tips & tricks
Add in sweet potatoes for good cards and more filling breakfast
Top with avocado or guacamole for extra fat
