Slow Cooker Chipotle Pork

3 lbs bone in pork shoulder roast
3 dried whole chipotle chills, deseeded and stems removed
1 medium white onion, diced
6 cloves of garlic, minced
6 sprigs of fresh thyme
1/2 tsp cinnamon
2 tsp paprika
2 tbsp apple cider vinegar
16 ounces of chicken stock
salt & pepper
vessel - tortillas/romaine lettuce cups/butter lettuce cups
1 red cabbage, thinly sliced
2 limes, juiced
1 red onion, finely chopped
1 jar salsa
Remove excess fat from pork, pat dry and season generously with salt and pepper (on all sides).
In a blender, mix the chipotle chilies, chicken stock, garlic, cinnamon, paprika and apple cider vinegar.
Place pork in a crockpot with onions and thyme. Then cover with pork with sauce.
Cook on high for 6 hours or until pork is falling off the bone.
Top with red cabbage, cilantro, red onions, lime, salsa and guacamole.

This can be used for salads or tacos.
