Simple Chick Pea Salad

2 cans chick peas

1/2 red onion, finely chopped

1/2 cup Italian parsley, chopped

1 small packet of mint, chopped

1 cucumber, deseeded and finely chopped

1 lemon

1/4 cup extra virgin olive oil

2 tsp cumin

2 tsp salt

1 tsp pepper

Chop up all red onion, parsley, mint, and cucumber.

Drain chick pea and rinse with fresh water.

Add all ingredients to a large bowl and mix.

tips & tricks

Serve over a bed of arugula or spinach

For extra fat, drizzle with tahini dressing (find it in sauces) or chopped avocado

For extra protein, add chicken
