Shredded Adobe Pork

3 lbs bone in pork shoulder roast

3 dried whole adobe chills, deseeded and stems removed

1 medium white onion, diced

6 cloves of garlic, minced

5 sprigs of fresh thyme

5 sprigs of fresh oregano

1 tsp cinnamon

2 tsp paprika

2 tbsp apple cider vinegar

16 ounces of chicken stock

salt & pepper

1 head romaine lettuce, chopped

1 red cabbage, thinly sliced 

 

Toppings:

2 limes, juiced

1 red onion, finely chopped

1 jar salsa

2 avocado, cubed or mashed 

1 bunch cilantro, chopped

  • Remove excess fat from pork, pat dry and season generously with salt and pepper (on all sides).

  • In a blender, mix the adobe chilies, chicken stock, garlic, cinnamon, paprika and apple cider vinegar.

  • Place pork in a crockpot with onions, thyme, and oregano. Then cover with sauce. 

  • Cook on high for 6 hours or until pork is falling off the bone.

  • To assemble, place chopped romaine lettuce and cabbage in a bowl.Top with pork, red onions, lime, salsa and guacamole, and cilantro.

tips & tricks

Siete has paleo almond flour, coconut, and cassava tortilla.

To make a quick guacamole - smash avocado with salt, lime juice, and a little onion.

Topping amounts will vary depending on what you like.
