Schrimp Scampi

1 lb shrimp

3 zucchinni, zoodled

2 tbsp ghee

2 tbsp grass fed butter

1/3 cup chicken broth

1 handful parsley, chopped

pinch of red pepper flakes

half bunch of asparagus, chopped

1 can quartered artichokes, drained

2 lemons, juiced

salt and pepper, to taste

1 scoop pesto (store bought or homemade)

  • Melt butter and ghee in a large sauce pan

  • Add garlic and red pepper flakes, saute for 1 minute

  • Add chicken broth and simmer for 2 minutes

  • Season shrimp with salt and pepper and add to sauce, cook until pink

  • Add asparagus, artichoke hearts, lemon juice and parsley

  • Mix and cook until asparagus are cooked (but still crunchy)

  • Season with salt and pepper to taste

  • Before serving, placed desired amount of zoodles n a bowl and zap in microwave for 30 seconds to soften

  • Pour shrimp over zoodles and mix in spoonful of pesto

  • Top with additional parsley
