Pistachio Pesto

Pistachio Pesto:

2/3 cup pistachios

1 cup basil leaves, tightly packed

1 clove garlic

1 tsp salt (eliminate if using salted pistachio nuts)

1 1/2 tbsp nutritional yeast

1 tbsp tahini

1/2 cup extra virgin olive oil

1 lemon, juiced

1 lemon, zested

Blend all ingredients in a food processor or high powered blender.

Pesto is a great dip/dressing to keep in refrigerator to jazz up meals

Delicious on salmon, chickpeas chicken, and shrimp

Great dip for vegetables

Change it up by using different nuts - almond, walnut, and pine nuts also work great!
