Pistachio Crusted Chicken

2 chicken breast
1/2 red onion, sliced long
1/2 fennel, sliced long
salt and pepper
1/2 cup parsley, finely chopped
1/2 cup pistachios, chopped
1 tbsp garlic, minced
1 tbsp lemon zest
1/2 tbsp evoo
Mix parsley, pistachios, garlic, lemon zest, evoo, salt and pepper.
Line a pan with parchment or foil and spread out red onion and fennel, toss with evoo, salt and pepper.
Pat chicken breast dry, season with salt and pepper and lay on top of vegetables.
Cook chicken (length will depend on thickness of chicken), five minutes before cover chicken with nut herb mix.
Plate with delicious green salt, roasted vegetables and extra nut herb mix.
tips & tricks
Save extra herb nut mix in the refrigerator for up to one week.
Use herb nut mix on top of fish, delicious on salmon.
