Pistachio Crusted Chicken

2 chicken breast

1/2 red onion, sliced long

1/2 fennel, sliced long

evoo

salt and pepper

1/2 cup parsley, finely chopped

1/2 cup pistachios, chopped

1 tbsp garlic, minced

1 tbsp lemon zest

1/2 tbsp evoo

  • Mix parsley, pistachios, garlic, lemon zest, evoo, salt and pepper.

  • Line a pan with parchment or foil and spread out red onion and fennel, toss with evoo, salt and pepper.

  • Pat chicken breast dry, season with salt and pepper and lay on top of vegetables.

  • Cook chicken (length will depend on thickness of chicken), five minutes before cover chicken with nut herb mix.

  • Plate with delicious green salt, roasted vegetables and extra nut herb mix.

tips & tricks

Save extra herb nut mix in the refrigerator for up to one week.

Use herb nut mix on top of fish, delicious on salmon.
