One Pot Chipotle Taco Meat

2 sweet potatoes, cut in small cubes
2 tsp salt
1 tbsp extra virgin olive oil
1/2 tsp black pepper
1-2 tsp chipotle chilli powder (it can get hot)
Chipotle Taco Meat:
1 package of turkey meat
1/2 yellow onion, diced
1 green bell pepper diced
2 tbsp oil of choice
2 tsp cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp salt
Preheat oven to 400 degrees, season sweet potatoes with salt, pepper, and chipotle chili powder and extra virgin olive oil.
Roast in oven, until edges are browned and potatoes are soft.
In a large pot, cook the bell peppers and onions in 2 tbsp of oil of choice.
Once the vegetables are soft, add in the turkey meat. Use the back of a wooden spoon to break up the meat. Cook until meat is browned.
Add in 3/4 jar of chipotle salsa (I used the xochitl chipotle salsa), cumin, onion powder,, garlic powder, and salt.
Let sit on medium high heat, until meat becomes thick and salsa has cooked out (about 15 minutes).
To serve, layer taco meat and sweet potato on a salad or in a taco shell. Top with cilantro, avocado, lime and extra salsa.
tips & tricks
Vegetarian Version: Substitute turkey meat for 2 cans of black beans.
Instead of using 3/4 jar of salsa, on use 1/2.
Healthy Substitutes - use Siete tortillas or serve over cauliflower rice.
