1 package turkey meat
1 jar of clean salsa (no sugar added)
1 tbsp EVOO
1/2 tbsp cumin
1/2 yellow onion
4 cloves of garlic, minced
1 bell pepper, chopped
1 zucchini, chopped
1 sweet potato or acorn squash, chopped
1 package of mushrooms
1 package of cauliflower rice
1 bunch of cilantro
Roast sweet potato/acorn squash for 40 minutes at 375.
Half way through on a separate pan roast zucchini, bell pepper, and mushrooms.
Take out when vegetables are roasted to your liking and sweet potatoes are soft.
On the stove heat up the evoo and saute the onion and garlic until clear, add the turkey meat and cook until brown.
Add half of the jar of salsa and cumin, cook until heated through.
Make your cauliflower rice (see recipe on veggie tab).
To serve fill a bowl with caulirice, meat, veggies, and top with chopped cilantro, avocado, lime and more salsa if needed.
