Meal Preppin Mexican Bowl

3 chicken breasts

2 large heads of broccoli, about 2-3 cups

3 tbsp extra virgin olive oil

1 green bell pepper

1 red bell pepper

1 yellow bell pepper

1 red onion

2 cans of plain black beans

5 stalks green onions

1 bunch cilantro

2 avocados

2 limes

1 jar of salsa



  • Preheat oven to 350 degrees.

  • Line a baking sheet with foil and/or parchment paper.

  • Chop broccoli into bite size florets, add to on half of the baking sheet.

  • Drizzle extra virgin olive oil on broccoli and season with salt and pepper, mix well.

  • Prep chicken breast, pat dry and season with salt and pepper. Add to the other half of baking sheet.

  • Place in oven and cook for 20-30 minutes, until broccoli is soft/roasted and chicken is fully cooked.

  • While broccoli and chicken are baking, prep other vegetables.

  • Chop red onion, green bell pepper, red bell pepper, yellow bell pepper and green onions. Slice 2 limes into fours (you will need 5 slices). Chop cilantro.

  • In a colander, drain black beans, rinse and let dry.

  • Once broccoli and chicken are finished, shred or chop chicken.

  • To assemble, add all bell peppers, green onions, cilantro, chicken, black beans, and broccoli to a bowl, top with (1/4) avocado, salsa, and (1/4) lime juice.

Vegetarian Option - Substitute chicken breast for 1 cup + 1/4 cup of quinoa.

Switch out your vegetable, I used broccoli because I had left overs. Other great options would be roasted sweet potatoes, brussel sprouts, cauliflower rice.

Before eating, if possible heat up roasted vegetable.

Meal Prepping Tips:

1. Store all ingredients in separate containers

- Container 1: Bell Peppers, Green Onions, Red Onions and Cilantro

- Container 2: Chicken

- Container 3: Black Beans

- Container 4: Lime Slices and Avocados


2. Assemble meals in separate containers

- Divide out all of the ingredients into 5 different container. Start with chicken and beans, then add raw vegetables, end with cilantro, avocado, and lime wedge.

- Keep salsa in a separate container.
