Lebanese Lentil Soup

2 tbsp extra virgin olive oil
1 1/2 cups red lentils, rinsed
2 stalks celery, chopped
2 large carrots, chopped
1 medium onion, chopped
1 tbsp cumin
1 tsp turmeric
1 tsp smoked paprika
2 tsp salt
1/8 tsp cayenne pepper
1 lemon, juiced
6 cups chicken stock
extra virgin olive oil
In a soup pot, heat up extra virgin olive oil.
Add the carrots, onions, and celery and cook until soft. About 5-10 minutes.
Once the carrots are soft, add in all of the spices, mix until well combined.
Pour in the chicken stock and the red lentil and reduce hear to a simmer.
Simmer until lentils are fully cook, about 10-15 minutes.
Use an immersion blender or regular blender to blend the soup until smooth.
Once blended, add in lemon juice.
Top with parsley, extra virgin olive oil and hummus (not necessary but delicious).
tips & tricks
Lentils are a great source of fiber, this soup will fill you up!
Adding a layer of hummus to the bottom of your bowl is a delicious addition!
