Lebanese Lentil Soup

2 tbsp extra virgin olive oil

1 1/2 cups red lentils, rinsed

2 stalks celery, chopped

2 large carrots, chopped

1 medium onion, chopped

1 tbsp cumin

1 tsp turmeric

1 tsp smoked paprika

2 tsp salt

1/8 tsp cayenne pepper

1 lemon, juiced

6 cups chicken stock

Optional Toppings:

parlsey, chopped


extra virgin olive oil

  • In a soup pot, heat up extra virgin olive oil.

  • Add the carrots, onions, and celery and cook until soft. About 5-10 minutes.

  • Once the carrots are soft, add in all of the spices, mix until well combined.

  • Pour in the chicken stock and the red lentil and reduce hear to a simmer.

  • Simmer until lentils are fully cook, about 10-15 minutes.

  • Use an immersion blender or regular blender to blend the soup until smooth.

  • Once blended, add in lemon juice.

  • Top with parsley, extra virgin olive oil and hummus (not necessary but delicious). 

tips & tricks

Lentils are a great source of fiber, this soup will fill you up!

Adding a layer of hummus to the bottom of your bowl is a delicious addition!

Pairs well with a small greek salad (see salad recipes)
