Honey Mustard Chicken Salad

Chicken Salad:

3 chicken breast, baked and chopped

6 stalks green onion, chopped

1/4 cup basil, chopped

6 stalks celery, chopped

1/2 cup almonds, sliced

1 tbsp mayo

honey mustard dressing

salt and pepper, to taste

Honey Mustard Dressing:

1/3 cup evoo

1 tbsp dijon mustard

1 heaping tbsp yellow mustard

1 tbsp balsamic vinegar

1-2 tbsp raw honey (to taste)

1 tsp salt

1/2 tsp pepper

Honey Mustard Dressing:

Add all ingredients to a blender and blend.

Chicken Salad:

Cook chicken breast in oven. Once complete chop.

Add sliced to a pan lined with foil and bake also in oven.

While chicken is cooking, chop green onions and celery

Mix all ingredients in a large bowl.

Add salt and pepper to taste.

tips & tricks

Serve over arugula or in butter lettuce cups.

For low sugar option only use 1 tbsp of honey.

Try making homemade mayo!

 So easy and will have cleaner ingredients than store bought.
