Greek Quinoa Bowl

3 chicken breast, cooked and chopped

1/2 cup of quinoa, cooked

1 handful cherry tomatoes, chopped

1 de-seeded cucumbers, chopped

1/2 cup kalamata olives, chopped

1 green bell pepper, chopped

3 stalks green onions, chopped

1/2 red onion, sliced thin

1 handful parsley, chopped

1 lemon, juiced

3 tbsp evoo

salt and pepper to taste

additional toppings: feta cheese, hummus, tahini dressing

  • Mix all ingredients in a large bowl (omit cheese if dairy free)

  • Add additional toppings

tips & tricks

Vegetarian Option: Leave out chicken breast, add chick peas, lentils or beans.

Cook quinoa in chicken or vegetable broth for extra flavor.
