Greek Chicken Salad

3 chicken breast, baked and chopped

6 celery stalks, chopped

1 handful parsley, chopped

1/2 english cucumber, deseeded and chopped

1 handful cherry tomatoes, chopped

1/4 cup pine nuts, toasted

1 lemon, juiced

4 tbsp extra virgin olive oil

2 tsp salt

1/2 tsp pepper

Dressing:

3 tbsp tahini

1 lemon, juiced

1 tsp cumin

1/2 tsp paprika

4 tbsp warm water

Mix sauce ingredients in a bowl and set to the side.

Mix the remaining ingredients in a bowl and add sauce.

Taste and add additional salt and pepper if needed.

Serve over lettuce or with grain free crackers.
