Goat Cheese Chicken

3 tbsp ghee

1 onion, sliced

1 large container mushrooms

1 tsp garlic powder

1 1/2 tsp Italian seasoning 

1 cup chicken broth

Salt and pepper, to taste

8 boneless chicken thighs

8 oz goat cheese

2 cans quartered artichoke

4 handfuls spinach

1 cup parsley, chopped

1 lemon

  • Preheat oven to 350

  • In a large pot, heat up ghee and sauté onion and mushrooms until soft

  • Add garlic powder, Italian seasoning, and salt and pepper to taste

  • Add chicken broth and goat cheese, mix until cheese is melted

  • Add artichokes and spinach, cook until spinach is wilted

  • Season chicken with salt and pepper and add to pot

  • Cover chicken with mixture

  • Place pot in oven and cook for 20 minutes,

  • After 20 minutes, turn on broil, cook for additional 5 minutes

  • Garnish with lemon and chopped parsley 

tips & tricks

Leave out goat cheese for paleo version.
