Cucumber Tomato Salad

1 cup cherry tomatoes, chopped

1 cucumber, peeled and chopped into small pieces

1 very large handful parsley, chopped

1/2 onion, chopped into very small pieces

2 tbsp extra virgin olive oil

1 lemon, juiced

1 1/2 tsp salt

1/4 tsp pepper

1 tsp cumin

  • Cut up all ingredients. 

  • Mix all ingredients in a large bowl.

  • Serve over greens or by itself.

tips & tricks

For extra fat, add avocado

Great side for grilled fish or baked chicken

Prep Tip: Remove seeds from the cucumber.

The seeds contain water and it will make the salad runny.
