Crockpot Shredded Greek Chicken

3 chicken breast, seasoned with salt and pepper
1/2 red onion, chopped
1 lemon, zested
1 tbsp fresh thyme
1 tbsp cumin
pinch of red pepper flakes
1/4 tsp pepper
juice of 1 lemon
2 cups chicken stock
Add all ingredients to a crockpot or instapot.
Make sure everything is well combined.
If using crockpot cook on high for 4 hours or low for 6.
If using instapot cooking for 30 minutes.
