Cinnamon Sweet Potato Toast

2 slices sweet potato, sliced 1/2 inch thick
1 tbsp almond butter
Place both slices of sweet potato on a microwave safe plate and microwave for 3 minutes (until soft).
Once they are soft you can immediately top with almond butter and cinnamon or if you want a little crunch, heat up a pan and toast slices.
tips & tricks
When buying nut butter make sure there are no added oils or sweeteners.
The only ingredient should be the nuts.
