Cilantro Lime Cauliflower Rice

Fast Recipe

1 packet of frozen riced cauliflower

1/2 cup cilantro, chopped

3 green onions, chopped

1/2 lime, juiced

salt and pepper, to taste

More Flavorful

1 tbsp extra virgin olive oil 

1/2 yellow or white onion, chopped

1 jalapeno, minced

1 packet of frozen riced cauliflower  

1/2 tsp cumin

salt & pepper,  to taste

1/2 lime, zested

1/2 cup cilantro

3 green onions, chopped

1/2 lime, juiced

Fast Recipe

  • Empty one packet of frozen riced cauliflower in a skillet. Set temperature to medium and cook until soft.

  • Add in cilantro, green onions, lime juice, salt and pepper and mix

More Flavorful

  • Add extra virgin olive oil to pan and set to medium heat. When oil is hot add onions and jalapeno and cook until soft.

  • Add 1 packet of frozen riced cauliflower to the onions and jalapenos. Mix well and cook until cauliflower is soft.

  • Once the cauliflower has defrosted, add in cumin, salt, pepper, lime zest, and cilantro. Mix well - until cilantro has wilted.

  • Top with green onions and juice of 1/2 lime

tips & tricks

Both recipes are delicious, the more flavorful recipes

just has more flavor due to the additional ingredients. 

The Fast Recipe is also delicious with Thai dishes, like a curry.

Frozen riced cauliflower can be found at all groceries in the freezer section.

Raw riced cauliflower can also be used. The cooking time will just be a little longer.
