3 chicken breast

 

Spice Mix:

1 tbsp kosher salt

2 tsp dried basil

4 tsp dried oregano

1 tsp dried thyme

4 tsp onion powder

4 tsp garlic powder

1 tsp turmeric

 

romaine lettuce

1 cups kalamata olives

1 green bell pepper, chopped

1 red bell pepper, chopped

1 cucumber, deseeded and chopped

1 cup fresh parsley, chopped

tahini dressing

  • Set oven to 350 degrees.

  • Season chicken breast with spice mix and place in oven until cooked.

  • Mix the herbs, chopped vegetables, and olives in a bowl and place in an airtight container.

  • When chicken is finished, let cool for 5 minutes. Once cooled, sliced in bite size pieces and store in airtight container.

  • To assemble salad, top romaine lettuce with handful of chicken and vegetable mix, topped with tahini dressing.

tips & tricks

Vegetarian Option: Leave out chicken and replace with chickpeas.

 

De-seed your cucumbers and tomatoes, the seeds hold water.
