3 lbs baked chicken, chopped
6 stalks celery, chopped
6 green onions, chopped
1/4 cup sliced almonds, toasted
4 tbsp evoo
1 1/2 lemons juiced
4 tbsp homemade mayo or primal kitchen (store bought)
1 tsp salt
1/2 tsp pepper
In a large bowl, mix the chicken, green onions, celery, lemon juice, salt, pepper, mayo and evoo.
Once all mix together, gently fold in the sliced almonds.
If the salad seems dry add additional mayo or evoo.
Eat plain or serve over arugula.
tips & tricks
If chicken salad seems dry add in extra olive oil or a little mayo.
homemade mayo can be made in the blender or with an immersion blender.
