Chicken Salad

3 lbs baked chicken, chopped

6 stalks celery, chopped

6 green onions, chopped

1/4 cup sliced almonds, toasted

4 tbsp evoo

1 1/2 lemons juiced

4 tbsp homemade mayo or primal kitchen (store bought)

1 tsp salt

1/2 tsp pepper

  • In a large bowl, mix the chicken, green onions, celery, lemon juice, salt, pepper, mayo and evoo.

  • Once all mix together, gently fold in the sliced almonds.

  • If the salad seems dry add additional mayo or evoo.

  • Eat plain or serve over arugula.

tips & tricks

If chicken salad seems dry add in extra olive oil or a little mayo.

homemade mayo can be made in the blender or with an immersion blender.
