1 tbsp coconut oil
1 handful chopped broccoli
1 handful spinach
2 -3 tbs nutritional yeast
salt and pepper to taste
In a skillet melt coconut oil and season with salt and pepper and cook broccoli until soft
If skill is large, enough push broccoli to one side and crack both eggs into the pan
Season egg with salt and pepper and carefully start to scramble just the whites
Once the whites are almost cooked, break the yolks and scramble until almost done (i like to leave them a little undercooked to add creaminess)
Add the spinach and 2-3 tbsp of nutritional yeast and cook until spinach has wilted
Serve in a bowl with a side of avocado and salt and pepper to taste
