Cheesy Eggs

2 eggs

1 tbsp coconut oil

1 handful chopped broccoli

1 handful spinach

1/4 avocado

2 -3 tbs nutritional yeast

salt and pepper to taste

  • In a skillet melt coconut oil and season with salt and pepper and cook broccoli until soft

  • If skill is large, enough push broccoli to one side and crack both eggs into the pan

  • Season egg with salt and pepper and carefully start to scramble just the whites

  • Once the whites are almost cooked, break the yolks and scramble until almost done (i like to leave them a little undercooked to add creaminess)

  • Add the spinach and 2-3 tbsp of nutritional yeast and cook until spinach has wilted

  • Serve in a bowl with a side of avocado and salt and pepper to taste
