Buffalo Quinoa Chicken Salad

Ingredients

Instructions

3 chicken breast, seasoned with salt and pepper

2 cups, cooked quinoa

1/2 cup hot sauce (I use Frank's)

1/4 cup + 2 tbsp ghee

2 tsp coconut aminos

1 tsp garlic powder

1 tsp onion powder

1 tsp salt

Salad Ingredients:

romaine lettuce

1/4 avocado

1-2 tbsp primal kitchen ranch dressing

1 stalk green onions, chopped

1 sprig dill, chopped

Preheat oven to 350, season chicken breast with salt and pepper and bake until cooked through.

Add ghee, hot sauce, coconut aminos, garlic powder, onion powder, and salt to a sauce pan, set to medium heat.

Use a whisk to mix until ghee and hot sauce are completely incorporated.

Once chicken is done either cut into small cubes or shred.

In a bowl mix the buffalo sauce, chicken, and quinoa.

To prepare salad, heat chicken and place over romaine lettuce.

Top with optional toppings and dress with primal kitchen ranch dressing.

tips & tricks

Meal Planning Tips:

To save time, buy a rotisserie chicken

Store chicken and quinoa in one container and remaining salad ingredients in another i the refrigerator. When packing for the day, place chicken in container first, followed by avocado, then lettuce. Add dressing right before you are ready to eat.

 

I like to heat my chicken up before eating, sometimes ghee will congeal.
