Banana Pepper Cauliflower

2-3 cups cauliflower, chopped
2 tbsp butter
15 mint leaves, chopped
1/4 cup banana pepper, sliced
salt & pepper to taste
parmesan reggiano cheese, to taste
In a pan, heat up 1 tbsp of butter.
Add cauliflower and cook until browned, tossing halfway through.
While cauliflower is cooking, heat remaining 1 tbsp butter in microwave, in a bowl.
Add mint and banana peppers to the bowl.
Once cauliflower is browned, add to the bowl and toss.
Top with parmesan reggiano, salt and pepper.
