Balsamic Brussel Sprouts

50 medium - large brussel sprouts, bottoms cut off and sliced in half
2 cloves of garlic, minced or grated
zest of 1 lemon
2 tbsp balsamic vinegar
3 tbsp extra virgin olive oil
Preheat oven to 400 degrees.
Place a large skillet or cast iron over a high heat with 2 tbsp of extra virgin olive oil.
In a large bowl, combine brussel sprouts, lemon zest, garlic, 1 tbsp evoo and salt and pepper to taste. Mix!
Once skillet is sizzling, add brussel spouts. Make sure all brussel sprouts are facing down.
Let the brussel brown for at least 5 minutes, untouched. You want the bottom to be crusty and completely brown.
Once brussel sprouts have browned add pan to the oven.
Cook brussel sprouts for 15-20 minutes, shaking the skillet every 5 minute to move brussel sprouts around.
Remove from oven when completely cooked and transfer back to the mixing bowl. Add 2 tbsp of balsamic vinegar and salt and pepper to taste.
tips & tricks
This recipe works best in a cast iron skillet and with large brussel sprouts.
Make sure the pan is very very hot before adding brussel sprouts.
Watch out for oil when adding brussel sprouts to the hot pan.
