Asian Turkey Stir Fry

Ingredients

1 package ground turkey meat or ground chicken

1/2 yellow onion, chopped

1 tbsp ginger, chopped

1 garlic, minced

1 carrot, chopped or 1/2 cup shredded carrots

1 zucchini, chopped

2 broccoli crowns, chopped

1/2 head nappa cabbage, sliced thin

2 green onion, sliced

Asian Sauce

1/3 cup almond butter

1/4 cup water

1/4 cup coconut aminos

1 tbsp rice wine vinegar

1/2 tbsp sesame oil

1 tbsp ginger, chopped

In a large frying pan, heat up oil. Once oil is hot, season turkey with salt and pepper cook until browned.

Once meat is cooked through, add in the onions, garlic, ginger, and carrots. Cook until onions are translucent.

Next add in the zucchini and broccoli (or any other vegetable).

Once the veggies have softened, add in the sauce and mix.

Lastly, add in the cabbage and green onions.

To make the sauce:

Add all of the ingredients together in an a bowl.

Use a whisk to breakdown the almond butter.

If mixture is thick, gradually add more water until desired consistency.

Optional Vegetable Add Ins:

Mushrooms, Water Chestnuts, Bean Spouts, Celery, Asparagus

Serve over caulirice or in butter lettuce to make lettuce wraps
